The hustle of getting your kids back to school can be stressful. But there is one part that doesn’t have to be: lunch. Here are three super-easy recipes that they might actually eat. Give ’em a try!
Super cool sushi
To make this crowd-pleaser, spread a whole-wheat tortilla with nut or sunflower butter and place a banana on top. Then roll the tortilla and slice into bite-sized “sushi” pieces. You can also fill this sushi wrap with their favorite lunchtime combinations, like sliced turkey and hummus or sliced cheese and veggies.
Simple sub (or burrito)
Put last night’s leftovers to good use! Fill a thermos with sliced meatballs and tomato sauce and pack a whole-wheat roll for a hot sub sandwich. Or fill the thermos with chicken-and-bean taco filling. Then pack whole-wheat tortillas and some shredded lettuce and cheese.
Fruit kabobs and yogurt dip
This easy dessert is sure to please! Fill school-approved, kid-safe skewers with your child’s favorite chopped fruit. Toss in a vanilla Greek yogurt for a dip packed with protein.
